♥♥♥CLEAN EAT SWEET TREAT♥♥♥ no bake oatmeal cookies

» kid friendly » freezable » packable » no bake

Someone once asked me the following question:

Can you eat clean and still have sweets?

First of all there are a lot of misconceptions about clean eating. I think the majority of the population believe that eating clean means tasteless cardboard and salads with no dressing. But I assure you it doesn't. As I have said before clean eating is just simply eating whole unprocessed food with no preservatives or artificial ingredients. And I have also said that you can take almost any recipe and clean it up. Well...let  me show you what I mean...

One of my go to recipes for a quick sweet treat is my grandma's delicious no bake chocolate oatmeal cookies. Their quick, easy, and ready in minutes. And my tribe loves them.

Here are the ingredients to my traditional recipe...the one I used for years:
  • 2cups of sugar
  • ¼ cup of cocoa
  • ½ cup of milk
  • 1 stick of butter
  • ½ cup peanut butter
  • 2½-3 cups of quick oats
The recipe I found for the cleaned up version came from here. My sweet cousin from Texas sent me the link and a part of me wishes she didn't because I have made several batches. And while they are clean and yummy their still not exactly calorie friendly. A lot better than their dirty counterpart but still not this thick girl's best friend.

The clean version called for:
  • 1 cup peanut butter
  • ½ cup honey
  • ½ cup coconut oil (you could also substitute butter)
  • 2 cups old fashioned oats
  • 1 cup shredded coconut
  • ½ cup chopped nuts, raisins, or dried cranberries
  • 1 ¼ cups dark chocolate chips (or regular semi-sweet chocolate chips, if you prefer)
  • 1 teaspoon vanilla extract
I don't add nuts or fruit. I also sub sweet-baking chocolate for the chocolate chips. That may not be 100% clean but like I've said before we are an 80/20 family. If you really wanted to make this recipe spotless you could use all pure/organic ingredients. If your interested in making this recipe click here for the directions.

In all honesty I love the cleaned up version so much better. The cookies are so much yummier! In the past my dirty version was always hit or miss. Would they harden or not? With the clean recipe you pour the hot mix into a baking dish and cool it in the fridge and they firm up. I pour mine over wax paper that way I can lift it out and cut it into perfect little bars! So easy and so yummy!

I hope you'll give this recipe a try. It really is AMAZING! Even if you're a dirtier eater try 'em, once you go clean on this recipe you'll never go back...I promise! And although it might be hard try to save some for the kids! ;)
